What is sustainable gastronomy?

Sustainable gastronomy means cooking that takes into account the origin of the ingredients, how the food is grown and how it reaches our markets and possibly our dishes.

History
The United Nations General Assembly formalizes the creation of this event on December 21, 2016, to celebrate an environmentally friendly style of cooking, which fights the waste of resources and that it can be continued in the future without prejudice to the ecosystem as well as to human health. In the meaning given to it by the UN, the term gastronomy defines the art of cooking food, with attention to the peculiar styles of the various regions of the world and to local cuisine; Sustainable gastronomy, therefore, means cooking that takes into account the origin of the ingredients, how the food is grown and how it reaches our markets and subsequently our dishes.

Purpose
The United Nations Educational, Scientific and Cultural Organization UNESCO and the Food and Agriculture Organization FAO and the United Nations General Assembly work to facilitate compliance with Sustainable Gastronomy Day, in collaboration with Member States, United Nations organizations and other international and regional bodies, as well as with civil society, to celebrate the Day and raise awareness of the necessary contribution to sustainable development.
